Baking Extravaganza:
Cinnamon-Sugar Roasted Nuts

This delectable treat was introduced to me a few years back when one of Hubby's coworkers gave out little bags of them as Christmas gifts. They are so delicious, of course I had to find the recipe and start making them myself. A measure of how good they are is that last night when they were done, Hubby took a handful and as he was eating them said, "I wish it was Christmas all year round." Meaning he wishes I would make these more than once a year. This recipe is SO EASY, I wouldn't mind making them more than once a year, but then they might not be so special and delicious anymore.

Okay, they probably would be. But I'm saving them as a Christmas season treat and he'll just have to deal with it.

The past few times I've only made walnuts, but this year I tried almonds as well. I actually think I like the almonds better, but Hubby remains a walnut man.

Ingredients:
4 cups nuts (almonds or walnuts)
1 egg white
1 tsp cold water
1/2 cup sugar
1/2 tsp cinnamon
1/4 tsp salt

1. Preheat oven to 250 degrees.

2. Nuts.
3. Separate egg white into bowl. Beat lightly.

4. Add teaspoon of cold water while ignorning the fact that I need to remove my chipped nail polish.

5. Beat egg white and water until frothy, but not stiff.

6. Add nuts (4 cups) to bowl.

7. Stir to coat nuts with egg/water mixture.


8. AVOID THIS STEP: Look in cupboard and realize you don't have enough sugar. Call Hubby so he can go to store on the way home. Two seconds later, he walks in... after ignoring your call because he's on the stairs almost to the door. Make him go out to get sugar in exchange for sewing a button on his suit before Thursday so he can wear it on an audit.
9. Mix sugar, salt, and cinnamon in separate bowl.
10. Add sugar mixture to nuts and stir until nuts are well coated.
11. Spread nuts evenly on a greased cookie sheet.
12. Bake for 60 minutes, occasionally stirring them around/flipping them over.

13. Remove from oven.

14. Allow to cool or suffer the burnt tongue consequences.

15. Enjoy!


He doesn't know it yet, but I hid the containers of these from the Hubster. I know that's awful, but I don't want him to eat them all before I have a chance to divvy up for my coworker gifts. Don't worry though, he'll get plenty.

Before I go today, I must say YAY MICHELLE! She won Biggest Loser last night and I am so glad it was her, not someone else I will not say the name of. Also, when Amy and Phil came out, I said "holy crap" like twenty times! They are completely different! And Jerry made me cry, per usual. I don't know if it's because he's a cop, or what, but he was my favorite. Anyways, that's enough of my embarrassing "I'm addicted to some stupid reality show" comments.

Okay, I must say that I love to read your recipe posts. The extra steps always add a chuckle to my day. :)
I need to tell you, I have always wanted to make these and have been afraid to. Not anymore! Yummy in my tummy! :)

I am going to back up your decision to keep a special Christmas treat. That is how I feel about Cherry Squares. Believe me, it is not always easy...
