My baking plans started last night and will continue until Wednesday or Thursday night depending on what day I decide to give gifts to coworkers. I will share at least one new treat, with recipe and photos, each day.
Before I share last night's work, first I must mention the manger additions of the third week of Advent: On the third week, shepherds are added. In my current collection of figures, this includes the sleeping shepherd (top left) and the shepherd with dog (bottom left), as well as a single sheep and a couple goats. The sleeping shepherd's name is Ephraim in the Fontanini collection, but in my collection his name is Brian because that's who gave it to me and in the package he said "his name is Brian." The shepherd with dog is Abraham. I haven't named the goats and sheep yet.
My baking last night began with a graham cracker crust for pumpkin cheesecake. When that was completed, I made cupcakes for the CID December birthdays- the Captain and a Detective. The cake part is from a box and the frosting is from a plastic container, but I am not ashamed. I've been wanting to use this cake mix to get it out of my cupboard and it fit perfectly into the baking schedule of the evening. Plus, I added chocolate chips to the cake mix, so that makes it custom.
As the cupcakes baked, my pie crust cooled. In the final minutes of the cupcake baking, I mixed up the pumpkin cheesecake fillings. When the cupcakes were done, I filled my pie crust and put the cheesecake in the oven. The reason for pumpkin cheesecake is that my friend/coworker made it while I was gone to VT for Thanksgiving, so I missed it. As I had a can of pumpkin filling left in my cupboard, I decided to make some of my own. The thing is, it only required a 1/2 cup of pumpkin and my can was a 15 ouncer. So I made pumpkin bread as well. Someday I'll share the pumpkin bread recipe, but for today please see recipes for the graham cracker crust and pumpkin cheesecake fill in the previous post.
Happy Monday! Christmas is just 10 days away!

I had forgotten that Biran gave you that sleeping guy. He names it "Brian" because he is sleeping, and that was what Brian did best at the time. :) Hey, speaking of Brian, check out his blog today. He is reaching out and needs a little loving...
