It's Finally Friday...

And I'm exhausted! It's only 9:30, but I'm headed to bed. Therefore this is going to be a quick post. Tonight "quick post" = Advent verse of the day and an easy and delicious chicken recipe, which Hubs and I had for dinner tonight.

The Advent verse for today is Isaiah 35:3-4. I am not great at interpreting Bible verses, but I feel like this verse is a great reminder that God fights for us and saves us every day. We need to be thankful for this, not just during this time of year when we celebrate the birth of His son, but year round.

"Strengthen the feeble hands,
steady the knees that give way;
say to those with fearful hearts,
'Be strong, do not fear;
your God will come,
He will come with vengeance;
with divine retribution
He will come to save you.'"

I made Lemon Chicken tonight. It's really easy and the chicken is always deliciously juicy. I only took one photo, because there aren't many steps, but please forgive how sad it makes this chicken dish look. I promise it is more appetizing than this photo shows!

Ingredients:
Boneless chicken breasts (you could also use bone-
in breasts or legs)
1 lemon
2 tsp. oregano
1.5 tsp. minced garlic
1 tblsp. olive oil
1/4 tsp. salt
1/4 tsp. pepper

Step 1. Preheat oven to 425 degrees
Step 2. Lightly grease baking dish
Step 3. Grate peel (1/2 or more) of lemon into dish
Step 4. Squeeze lemon juice (approx. 1/4 cup) into dish
Step 5. Add oregano, garlic, oil, salt, and pepper
Step 6. Mix all ingredients together
Step 7. Place chicken into dish
Step 8. Spoon lemon mixture over chicken
Step 9. Cover dish and bake for 20 minutes
Step 10. Remove chicken and spoon
mixture over chicken again
Step 11. Reduce heat to 400 degrees and
cook additional 30 minutes

Note: For a bit more lemon flavor, you can marinate the chicken (in the fridge) in the mixture for any desired period of time. I let it marinate for about an hour tonight, but have done it for a day before. However, if you do it for the day, it will make the chicken kind of soft on the outside.
Note 2: This chicken is also delicious on the grill. The additional smoky flavor from charcoal is amazing.


I hope everyone has a fantastic weekend! Hubs and I are going on a "group date" tomorrow to see Four Christmases and have dinner, so that should be fun. On Sunday we are planning to get our tree. I'm so excited for that!
