Refrigerator Jam

Thanks to Mum for the recipe… and the awesome teas we’ve already had enjoying this jam on homemade scones!

Ingredients:
1 lb strawberries
2/3 cup sugar
2 tblsp powdered pectin
2 tsp lemon juice

Directions:
Cut off the tops of the berries and cut them into smaller pieces into a pan.
Mash the strawberries with a potato masher or fork. Add the sugar… Pectin…

And lemon juice.

Cook slowly over low/med-low heat, stirring occasionally, until slightly thickened. Cool and put in fridge to thicken further.

Once cooled and thickened in the fridge, serve on scones or toast… or even on vanilla ice cream. Yum!
